Raspberry Vinaigrette

I got tired of watching the fresh raspberries slowly get old. My 7 year old son just loves them until they get slightly mushy. Then he won't touch them. We don't have a lot of bushes here at the farm, there aren't usually any left over. In the odd case where we do have left overs they are totally worth saving. We either freeze them for smoothies or we add them to salads and that's when it hit me!!! Vinaigrette!!! Especially delicious and light on a warm day. This is a super easy recipe made with any raspberries...fresh, old, mushy, it all works. 

 Ingredients

  • 1 cup raspberries
  • 2/3 Cup Balsamic Vinegar 
  • 2 Tablespoons (TBS) Honey
  • 1/4 Cup Olive Oil
  • 1/2 Teaspoon (TSP) Salt

    Directions:

      1. Mash up raspberries with a fork and add to jar
      2. Add vinegar + Honey + Olive Oil + Salt
      3. Cover jar with lid and shake till mixed
